Thanks for a very instructive video, Little Cookie. From now on I’ll know just what to do next time someone whines that I treat them like a piece of meat. Oh and “Get to know your chicken” is my new catchphrase.
No more sad nights eating dried out chicken! I’ll have to implement this technique next time. I used a mixture with apple juice concentrate on pork chops one time and they turned out quite nice.
P.S. The butt shot makes me laugh every time.

May I add that, as most things in life go, it is also best to start with good meat. Kosher chicken and chicken made with no antibiotics are always recommended. Popular brands include Empire and Bell & Evans.

So I finally tried brining chicken tonight, scrupulously following Johnny’s example minus the naked ass thing. I don’t mean to flaunt my own piece of meat but I can’t believe the difference between the dried chewy cheap cut I had a few days ago and the tender, moist and juicy breast of tonight – and I’m usually not much of a cook. I added a pinch of dried thyme and garlic powder to the water and the taste was much richer than if I had sprinkled twice the amount during cooking. Thanks for the tip, Martha!
